~~ Spinach and Egg

Appetizers-

~~Spinach salad- Spinach with dried cranberries, mandarin oranges, pistachios, topped with goat cheese served with a side of raspberry vinaigrette dressing.

~~Stuffed finger peppers- finger peppers stuffed with prosciutto and sharp provolone cheese drizzled with balsamic fig reduction.

~~Mozzarella Capraise- thick slices of fresh buffalo mozzarella layered between vine ripe tomatoes with kalamata olives and fresh basil drizzled with olive oil.

Entrees-

~~Shrimp Parma- shrimp tossed in a marsala wine sauce with mushrooms, scallions, tomatoes and prosciutto served over penne topped with melted mozzarella cheese.

~~Chicken Amanda- Chicken tenderloins tossed in a penne pink alfredo with banana peppers.
